SWEET RICE / COCONUT DESSERT REVISITED
Deb, this is especially for you. I have made a wonderful, time saving discovery: sweet rice cooked in the microwave turns out just as well as sweet rice soaked overnight and steamed in cheesecloth.
So, my kids' new favorite (now that it is quick and easy enough to make regularly) coconut rice pudding:
Rince and then soak 3/4 - 1 cup of sweet rice in double the amount of water for an hour or so in a microwave safe bowl. Cover with Saran wrap and microwave 20 minutes. Let it sit 10 or 15 more minutes because you got distracted doing something else. Stir one can of cream of coconut (the sweetened stuff) into the hot rice, and refridgerate until cooled and set. (Or serve it hot and soupy if you can't wait.) Serve topped with fresh ripe mango (or peaches or nectarines or fresh berries...)
