SWEET RICE / COCONUT DESSERT REVISITED
Deb, this is especially for you. I have made a wonderful, time saving discovery: sweet rice cooked in the microwave turns out just as well as sweet rice soaked overnight and steamed in cheesecloth.

So, my kids' new favorite (now that it is quick and easy enough to make regularly) coconut rice pudding:

Rince and then soak 3/4 - 1 cup of sweet rice in double the amount of water for an hour or so in a microwave safe bowl. Cover with Saran wrap and microwave 20 minutes. Let it sit 10 or 15 more minutes because you got distracted doing something else. Stir one can of cream of coconut (the sweetened stuff) into the hot rice, and refridgerate until cooled and set. (Or serve it hot and soupy if you can't wait.) Serve topped with fresh ripe mango (or peaches or nectarines or fresh berries...)

Anything to keep the kitchen cooler. I think peaches would be wonderful on top.

Just returned from family reunion--I love the Master lists and curriculum you have done. Maybe writing down directions on a Master sheet would have been a good idea for Isaac. As it was, similar repeated oral and written directions (on daily papers) never seemed to modify behavior as intended. Unfortunate both for him and me.

I justlooked for cream of cocnut.

Can you tell me what section of the store to buy this in? Should I look at my hfs?

I'd try the ethnic foods section... Goya is one brand that makes it, that is widely carried by ordinary grocery stores.

If you can't find it, you can use coconut milk, pouring off most of the watery part (it separates somewhat in the can) and adding sugar to taste. The cream of coconut comes sweetened (it is used for pina coladas, etc.) and coconut milk doesn't. (Just to confuse things, some cookbook authors use "coconut cream" to refer to the thick, solid part of the coconut milk... which is also not sweetened.

So -- what is sweet rice? I assume that is different from the regular rice used in rice casseroles, etc?

Yes, very different! This rice is used pretty much exclusively fot desserts in East Asian cuisines. Again, ethnic food section or maybe a Japanese grocery store.

I asked for cream of coconut in the small local grocery after searching to no avail and the gentleman led me to a shelf section for mixed drinks where it was located between mixes for fancy alcoholic drinks.


We made it and had fresh peach slices on top. The nephew who 'doesn't like coconut' thought it was absolutely scrumptious.

Given that he's not a big rice pudding fan either, nor is he fond of mangos ("too exotic") -- he passed.

Sora - thank you so much for this recipe! My children love rice pudding and this version is so simple.
